Fermentation Weekends – Learn Raw Food & Fermentation

This is for you if you are curious about fermented foods and working with food cultures to help support long term health and master playtime in the kitchen! If you are ready to unplug in to nature and spend a long weekend feasting on organic produce made by you & me then you need to book this… 

Daily raw food and fermentation classes will be the main feature of this weekend, and each evening we will feast on the foods of our labour.

There will be a chance to learn and explore organic food production, go free range on location, get hands-on if you wish, and nourish your body at this restful retreat with like-minded health-seekers who enjoy exploring life that is a little more ‘off-the-grid’.

We will get the chance to know each other around the dinner table each day.

Your hosts

I am Stephanie Jeffs, a raw food chef & teacher – read more about me here and explore this website to find out more about what I do with raw food and a raw living-foods lifestyle.

Cuisine

We will feast daily on organic produce, mostly produced and prepared on location. The food will be organic, mostly vegan and mostly raw although not exclusively. The focus of our dining will be fermented organic plant-based produce. The retreat is also alcohol and coffee free. Want to master making sourdough? Buckwheat breads? Want to make kombucha? Want to play with cultures and make your own vegan (and some dairy) milks and cheeses? Want to make your own fermented pickles, yogurts, cheese and more? You can!

Location to be announced with dates: UK & Portugal.

Teaching schedule

Each day will be different – we will work with the flow of the group and the availability of our produce. However this is an idea of what our teaching schedule will cover

Our 3 day retreat:

  • Thursday: Arrivals from 18:00 onwards
  • Thursday pm: Welcome dinner, bread preparation and an evening of rest
  • Friday: Teaching, rest, dining
  • Saturday: Market visit, teaching, rest, dining, entertainment
  • Sunday: Explore the area, teaching, lunch, depart 14:00

A transfer to and from the airport is included in your price and is at fixed times: leaving the airport at 20:00 on arrivals day and departing for the airport at 14:00. Cash alternatives are not available if you arrange your own transport.

** HOW TO CARAMELISE RAW VEGGIES ** All food prepared with love is an absolute delight. And these caramelised veggies are no exception. 
They’re also a perfect addition to any festive platter. I just love massaging the paste in to these veggies before they get warmed in the dehydrator (or oven) and turned in to deliciously sweet, caramelly veggies (or crunchy chips if you keep them in for longer!) The basic paste is used in several of my plant based recipes. Because it’s sort of a staple. It’s easy and it just works! You can find it in my ebook A Raw Christmas and in my carrot batons recipe (you simply have to try it!) INGREDIENTS 🌟4 parsnips, beetroots or any veggies (especially roots)
🌟 3 tablespoons Udos Choice, olive or Flax oil
🌟 water to blend (1/4 cup)
🌟 2 tablespoons tamari
🌟 4 medjool dates
🌟 4 dried apricots
🌟 2 tablespoons maple syrup, raw honey or other liquid sweetener of your choice

METHOD

Clean and cut the veggies in to halves or thin slices. Mix the other ingredients to form a batter in a high-powered or personal blender. Pour the batter over the veggies a bowl and massage with your hands until all the veggies are really well covered. Remove and place on dehydrator trays. Spread the veggies over the trays including any excess sticky batter and dehydrate overnight (9 hours) on 43. Keep warm until dinnertime or keep drying until you get crunchy veggie chips (can you wait that long?) Yes!! It’s sooo nearly Christmas! Everything’s wrapped up n ready and I am immersed in preparations, it feels great! We will most definitely be enjoying these delicious stuffing balls with our festive supper! I love stuffing.. so bad. I could eat it in sandwiches, on anything, by itself, with all sorts… it’s the best! And this recipe really is champion! You can use this base recipe also to make festive crackers in the dehydrator too – trust me. It works on every universal level!

Ingredients

Makes 12 – 20 balls 🌟1 white onion finely chopped
🌟 4 medjool dates (stoned and roughly chopped.
🌟 1 cup soaked buckwheat (soaked in filtered water overnight and rinsed and soaked and rinsed for a further 12 hours)
🌟 1 cup soaked sunflower seed mix (soaked in filtered water for 4 hours and rinsed) 🌟 ½ cup organic oats (not soaked)
🌟 1/3 cup soaked linseed (just one hour soak is fine. Just cover the seeds in water. Not too much)
🌟 10 fresh sage leaves (chopped or cut finely)
🌟 1 heaped tspn capers
🌟 1 tspn dried sage
pinch salt & pepper to taste

You will need:

Food Processor
Dehydrator or oven

Method

Start with the onions in the food processor. Pulse to break down (don’t over blend or you will puree it) Add all other ingredients slowly. Leave the mix chunky or as fine as you like it. Use an ice-cream scoop to make flat balls or use your hand to make round balls. Dehydrate on 42 overnight or for 9 hours, until dried but not too crispy (unless you like them crispy!) If using an oven dry for up to 4 hours on 50 (or lowest setting) with the oven door ajar.

Sharing space in my kitchen when I have my chef head on isn't always an easy job for me but it was a gorgeous delight with @lauren_lovatt in Portugal at our amazing boot camp retreats last year as we spent most of the time dreaming up plates (fabulous), stuffing our faces with delish food (always) and serving our guests the best food we know how to make. 🌟🌟🌟MAKE & EAT THIS WITH ME AT MY NEXT RETREATS. Although I have eaten these cakes a thousand times I am sure I make them differently each time - the secret is to play and use up the nuts and seeds and fruits that you have in the kitchen rather than panicking about being specific with the recipe. That's how I roll I guess.

Yes!! It’s true I am RECRUITING for a volunteer who can join us for TWO WEEKS with @exploreraw for Sept 22nd - Oct 6th! This would be perfect for someone who is already juicing and exploring raw foods who wants to take their plant based catering (for home chefs or professionals!) to the next level! This is NOT suitable for anyone who is new to juicing looking to detox in exchange for some graft. The ideal person MUST be able to operate to sometimes stressful deadlines (ok knocking out lots of juices at the same time!) & understands how to make 20 identical juices using a little mixology. Lots of ‘retreat jobs’ will also be required - Manager of the Good Vibes: aka lighting candles, making sure the music is on point, keeping an eye on the humidifiers, hugging guests or team when we need some love. The ideal person isn’t above doing mountains of dishes with us, lots of food delivery prep, meal time prep and end of day kitchen close down. The volunteer will be working closely with me most of the day (I tell bad jokes all day so be ready!): the days are long but joyous & most intense time will be food prep from 09:30 - 14:30 & 17:00 - 20:00. 
In return I can offer accommodation, all food, same goodies as the guests, lots of talks, all my kitchen cookery classes, movies, evening meditation, and an amazing team bonding experience like no other.
