Fermentation Weekends – Learn Raw Food & Fermentation

This is for you if you are curious about fermented foods and working with food cultures to help support long term health and master playtime in the kitchen! If you are ready to unplug in to nature and spend a long weekend feasting on organic produce made by you & me then you need to book this… 

Daily raw food and fermentation classes will be the main feature of this weekend, and each evening we will feast on the foods of our labour.

There will be a chance to learn and explore organic food production, go free range on location, get hands-on if you wish, and nourish your body at this restful retreat with like-minded health-seekers who enjoy exploring life that is a little more ‘off-the-grid’.

We will get the chance to know each other around the dinner table each day.

Your hosts

I am Stephanie Jeffs, a raw food chef & teacher – read more about me here and explore this website to find out more about what I do with raw food and a raw living-foods lifestyle.

Cuisine

We will feast daily on organic produce, mostly produced and prepared on location. The food will be organic, mostly vegan and mostly raw although not exclusively. The focus of our dining will be fermented organic plant-based produce. The retreat is also alcohol and coffee free. Want to master making sourdough? Buckwheat breads? Want to make kombucha? Want to play with cultures and make your own vegan (and some dairy) milks and cheeses? Want to make your own fermented pickles, yogurts, cheese and more? You can!

Each day will be different – we will work with the flow of the group and the availability of our produce. However this is an idea of what our teaching schedule will cover

Our 3 day retreat:

  • Thursday: Arrivals from 18:00 onwards
  • Thursday pm: Welcome dinner, bread preparation and an evening of rest
  • Friday: Teaching, rest, dining
  • Saturday: Market visit, teaching, rest, dining, entertainment
  • Sunday: Explore the area, teaching, lunch, depart 14:00

The days are get lighter and brighter, evenings are filling with energy and the anticipation of summer, the promise of fresh air and flowers and my taste buds are changing! 😎💃🏻🐟🧘🏻‍♀️🐛There’s still a slight chill in the air for me – and I find that this recipe warms me through – so why not try it for yourself and warm up with this recipe for an absolutely delicious plant based daal/dhal/dahl. (Let’s use dhal for this recipe….) Here’s the recipe – a delicious culmination of many years in the making with culinary tips passed on through family links from my lovely friend Bruna from @londonnutcheeseco 
Full recipe is on the blog - here’s the version without the masala 🌿🌿🌿Ingredients (Dhal)

1 onion, diced
2 garlic cloves, mashed
2 cm ginger root, grated
2 carrots, diced
2 cups sprouted (activated) lentils (or split red lentils)
2 tsp turmeric powder
1 tbsp homemade masala
1 tbsp olive oil (optional – can fry in water if you prefer oil free)
1/2 lime, juiced
3 large sweet tomatoes
fresh coriander & quality sea salt to serve (optional) 💪🏼💪🏼💪🏼
Using a lidded wok or large pan, heat the oil (optional – use water if you prefer cooking oil free) and add the onions, garlic and then the ginger
Add half of the masala and all of the carrots, let it cook for about 5 min, mixing frequently to avoid burning
Add the lentils and enough water to cover all the ingredients
Close the pan with a lid and let it cook on a medium heat until tender (carrots & lentils will be soft)
Once cooked, add a small pinch of salt (optional), turmeric and the rest of the masala. Add more if you feel it needs more flavour – make the flavours work for you
Once cooked, add about 1 cup of the dhal to a blender with the tomatoes and blend till smooth
Return the contents of the blender to the main dhal pot and mix well, reheat if necessary

I’m 50 next year (waaahhh?!) and I’m getting married to my childhood sweetheart (awwww) so that’s two good reasons why I need to #reboot my butt and get back in better shape. To have the strength to enjoy it all (not just about getting my butt in to a nice dress) I’ve been a lazy schmoo, ya know, just enjoying this wonderful thing called LIFE! 
And here’s the confession: I‘m trying my best not to care anymore what people think of my gut or my butt! This industry can be unkind to those who don’t look like a gold medal winner or a petite ballerina doing yoga. THIS is the VERY reason why I put myself out there to show folks like YOU that anything is possible, YOU DO HAVE PERMISSION in all forms to move your body and get your wiggle on. 
Getting a little fitter is NOT an exclusive club for the young and slim. Middle aged flabbies like me can get it on too. I HONESTLY think that ALL we’re meant to do in life is: 🌿 explore (be interested in EVERYTHING)

Cheese making. Chocolate making. Mushroom blend creating. Burger making. Sprouting. Juicing. Blending... just some of the wonderful memories of cheffing for our awesome guests this season with @exploreraw, my private teaching and retreats. Without a doubt I love this job. Preparing healing plant food & holding a space for others to just ‘be’. I always say that ‘what’s inside always comes out’ you just can’t hide from it - and I don’t mean just the food 😜 I mean ‘ones truth’: anxiety, stress, love, hate, fear, happiness, sadness. All of it. All of our emotions can spill out when we Detox. When we stop thinking that we HAVE to keep holding it in. Gotta let go of it all (good stuff & bad stuff) to make space for the new stuff (good & bad) Just don’t blame the cheese. Or the cheese makers. Or those holding that space for you... hardest thing in the world sometimes to do. But allowing those around you to hold space while you learn to let go can often help create some of the most powerful and beautiful relationships ever. Love your space holders, friends, teachers, yogis, trainers, feeders... they are the greatest gift! People looked at me shocked when I first talked about serving up chocolate smoothies & chocolate treats at my bootcamps @Rawjuicecamp and retreats. 
When it's high vibration raw vegan cuisine that's gourmet standard: that's always a good decision and perfect fuel for my guests. I believe we were the first 'Bootcamp outfit' to start serving raw chocolate at camp some years ago and give workshops on how to make raw chocolate and a whole host of other raw vegan treats. I believe that if you want lifetime health & wellness you have to start on the greens but know how to indulge yourself healthily. 
I love that we don't follow any of the 'standard' rules for ‘fat farms’ and we don't follow calorie counts or punishing routines. We don't suggest that you can big up your fitness and then blow it all on the wrong treats: like 'the odd mcdonalds' or 'a cheeky prosecco every night'. It doesn't work. 
You'll eventually come to realise that loving yourself means treating yourself with gorgeous nourishment. And not taking it all so seriously. Life should be fun. And full of chocolate

I believe we were the first 'Bootcamp outfit' to start serving raw chocolate at camp some years ago and give workshops on how to make raw chocolate and a whole host of other raw vegan treats. I believe that if you want lifetime health & wellness you have to start on the greens but know how to indulge yourself healthily. I love that we don't follow any of the 'standard' rules for ‘fat farms’ and we don't follow calorie counts or punishing routines. We don't suggest that you can big up your fitness and then blow it all on the wrong treats: like 'the odd mcdonalds' or 'a cheeky prosecco every night'. It doesn't work. You'll eventually come to realise that loving yourself means treating yourself with gorgeous nourishment. And not taking it all so seriously. Life should be fun. 🌟🌟🌟RECIPE ON THE BLOG at @exploreraw 🌟🌟🌟I love learning from people who are not only talented and completely amazing but who are lovely to work with too! Sharing space in my kitchen when I have my chef head on isn't always an easy job for me but it was a gorgeous delight with @lauren_lovatt in Portugal at our amazing boot camp retreats last year as we spent most of the time dreaming up plates (fabulous), stuffing our faces with delish food (always) and serving our guests the best food we know how to make. 🌟🌟🌟MAKE & EAT THIS WITH ME AT MY NEXT RETREATS. DATES LAUNCHING SOON 🌟🌟🌟 This is one of the plates we PIMPED up: my much loved carrot cake recipe. Although I have eaten these cakes a thousand times I am sure I make them differently each time - the secret is to play and use up the nuts and seeds and fruits that you have in the kitchen rather than panicking about being specific with the recipe. That's how I roll I guess.
