Are your eyeballs bulging at this pic as much as mine are? ‘Tis true. I am in love with carrot batons. These delicious babies are totally loveable and delicious and if you make them you too might fall in love with carrots again and you will find out why they are so adorable. They are truly delicious, served warm from the dehydrator with a buttery, sweet floppy feel or keep them going to crisp them up into carrot chips. Oh yeah. This just happened. Try this and let me know how you get on. One thing is for sure – there will be no regrets.
- 6-8 carrots
- 3 tablespoons olive oil
- water to blend (1/4 cup)
- 2 tablespoons tamari
- 4 medjool dates
- 4 dried apricots
- 2 tablespoons agave, maple syrup or raw honey
Clean and cut the carrots into baton shapes (or as you like them!) Mix the other ingredients to form a batter in a high-powered or personal blender. Pour over the carrots in a bowl and massage with your hands until all the carrots are really well covered. Remove the carrots and place on dehydrator trays. Spread carrots over the trays including any excess sticky batter and dehydrate overnight (9 hours) on 43. Keep warm until dinnertime or keep drying until you get crunchy carrot chips (can you wait that long?)
