Recipe for Medicinal Mushroom Soup (Raw, Vegan and Nutritious!)

Winter Wellness is a strapline that is being thrown around quite a lot lately! And that’s not a bad thing! A deeper understanding of your own Winter Wellness needs and what is going to work for you is the secret to your own health strategy and success – it’s a very personal thing. Wellness is not just a tick list of what to take out of the diet but also an understanding of what you need to be putting in to your body to nourish yourself and keep your winter glow.

For those of us facing cold winter months right now January can be a hard month for all of that: which is why I don’t usually recommend a ‘detox’ approach to keeping healthy – but a nourishing approach. For sure you need to keep a focus on keeping the crap out of the diet – alcohol, chocolate, party foods, meats, dairy and so on – should be seen as special guests in your diet – and not the main characters. It goes without saying that moving towards a clean plant-based diet is my total preference and as much raw food that can feature in that then all the better!

So what on earth should we be eating in January? Well. Tasty nourishing food that you enjoy of course! To help you explore a range of raw food options I thought I would share this recipe for my Medicinal Mushroom Soup – it’s delicious, creamy and oh so nourishing! I love using quality products so you may enjoy the healing benefits of Reishi Mushroom Powder that you can find in quality health food stores and of course – the ever delicious and versatile Udo’s Choice. Why reishi? For its apparent healing and immune boosting properties it should be introduced as a regular feature to the diet and not a one-off ingredient.

Here’s how to make the soup.

Ingredients

Use a Vitamix or other blender. Serves two.

  • 1 cup nutmilk
  • 1 cup redhydrated exotic mushrooms (dry weight)
  • 2 tbspn Udo’s Oil or olive oil
  • squirt lemon juice (1/3 lemon)
  • ½ tspn garlic powder
  • 2 cloves garlic
  • ½ cup soaked cashews
  • 1-1.5 tbspn nutritional yeast flakes
  • 1 teaspoon tamari
  • 1 tbspn tahini
  • pinch black pepper
  • water

Toppings:

  • Pinch alfalfa sprouts
  • Udos Oil
  • Pinch reishi mushroom powder

Method

  • Blend all ingredients in your Vitamix or blender adding milk last until smooth – use tamper
  • Build heat slowly
  • Add up to ½ pint water or more (to taste) – to reach desired soup consistency
  • Continue to blend on high – carefully
  • Do not boil
  • Warm gently

Dress with pinch alfalfa sprouts and a drizzle of Udos Oil

Sprinkle over reishi mushroom powder (or medicinal blend)
