Quinoa & Mango Salad

Deeeeeelicious! Well if you have been reading any of my recipes and following my foody blog then you will know how much I love a kitchen rummage and a good old pot luck recipe. Throw it together and you just don’t know what you are going to get.

However if your cupboards are full of foods that

  • you love
  • are good for you

then chances are that anything you rustle up is going to be pretty rock-tastic. I had a food mooch around the cupboards and came up with this little darling. Mr Z and I scoffed it down ravenously! We loved it! Make it your own and play with the measures but this was pretty much it:

Ingredients for 2 mains

  • Salad1/2 cup quinoa (soaked in boiling water or cooked to instructions)
  • 1/2 cup black eyed beans
  • 1 carrot (chopped in food processor)
  • 1 head broccoli (chopped in food processor)
  • handful of raw peas
  • handful chopped green beans
  • handful of unroasted peanuts
  • 1 tbspn pumpkin seeds
  • 1 tbspn soaked activated almonds
  • 1 teaspoon mixed seeds (poppy, linseed)
  • 1 bag of semi-dried mango pieces (or use 1 chopped fresh mango if you have one)

For the dressing: (all in equal measures except where stated)

  • lemon juice
  • pomegranate juice
  • apple cider vinegar
  • honey (or sweetener of your choice)
  • 1 thumb ginger (finely chopped or grated)
  • 2 tspns Udos Ultimate Blend Oils

 

Method

For the salad: mix the chopped ingredients except for the mango in a bowl. Blend the dressing ingredients using a personal or hand blender and pour over the salad. Add the chopped mango. Serve immediately
