If ever there was a perfect recipe out there that combined simplicity, gorgeousness, tastiness and healthfulness in one – this just might be it!
I love anything and everything that is tasty and simple. The fact that this dessert/breakfast is also incredibly-good-for-you food is simply a bonus! Oh yeah – and it’s full on raw, vegan, gluten free blah blah blah too. I tend to forget to add that stuff to recipes these days because most of what I consume falls into this bracket. I often also find that if you ask someone ‘would you like to try my raw vegan gluten free breakfast’ what people actually hear is ‘would you like to taste some cardboard’! And for those of us that know better… nothing could be further from the truth. Sharing this recipe with others is a great way to start changing peoples minds about what constitutes a healthy, vegan, raw meal.

Here it is.
Ingredients for each person you will need:
- 2 cups raw almond milk (store bought is fine if you don’t make your own yet) (less if you like your pudding thicker)
- 2 tablespoons chia seeds (white or black)
- 1 tablespoon cacao powder
- 1 teaspoon cacao nibs
- handful raspberries
- teaspoon edible roste petals (optional)
- teaspoon coconut flakes (optional)
- teaspoon bee pollen (optional and not vegan)
- 1 banana
Blend your almond milk with cacao powder. Put chia seeds in a glass or bowl for serving and cover with the chocolate almond milk. Stir in the seeds so all the seeds are lifted from the base of the glass. Leave to set in fridge overnight with the occasional stir before you go to bed to make sure that there are no congealed lumps of seeds. Spread the seeds. Spread the love. The seeds will bloat overnight and take on a gorgeous bitter chocolate flavour and resemble the texture of tapioca.
In the morning – hold yourself back from devouring the lot in one go straight from the fridge – and sprinkle with cacao nibs, raspberries and edible rose petals. Serve with a ripe chopped banana, coconut flakes, bee pollen and a final dusting of cacao powder.
It’s not too sweet. It’s a little bitter. That’s what the banana is for – to add sweetness. You can also blend vanilla pods, lucuma, maca etc into your milk as you learn to play with the tastes a little. Add more chia seeds if you like it thicker. Add coconut oil for more of a mousse texture. Create your own blissful breakfast.
