Gorgeous Raw Pasta Recipe with Avocado

This amazing dish can be whipped up in minutes and is REALLY satisfying!

So for a long time I haven’t eaten pasta. I don’t miss it at all! And for someone who used to work in an Italian restaurant, back in the day, that might be quite hard to fathom. Thing is – I really don’t miss it. Since cleaning up my diet it’s something that I haven’t craved. Now, for someone who once used to try to perfect the process of making perfect spaghetti, by hanging it to dry over the dining room chairs, and who envied her sister’s pasta making machine – this is quite some statement!

So I haven’t been having any pasta cravings but I have had pasta-style-dish cravings. I mean – long spaghetti is just such fun, right..? So when I got my first spiralizer a couple of years ago I really haven’t looked back. I make noodles out of carrots, cucumbers, courgettes…. you name it and it’s probably been a noodle in this house at some point (great tip – sprialized veggies are GREAT in raw soups and raw ramens. So I whipped this up a couple of days ago for lunch. Nomfest. I don’t often post recipes with avocados in (although I eat them alot!) and I was in the mood for some serious greens. To be fair you can pretty much do a ‘free-style’ with this recipe: Noodles, sauce, crunchy veggie bits. Here’s my version:

Ingredients (per person)

  • 1 courgette
  • lemon juice
  • 1/2 avocado
  • 1 tbspn coco yoghurt (optional)
  • pinch himalayan salt
  • 1 spring onion
  • handful samphire
  • 2 green beans

Method

Using a spiralizer or spriali turn the courgette (or cucumber or a veggie of your choice!) into noodles. If you don’t have a spiralizer you can use a veggie peeler to make pasta ribbons. Next make the avocado dressing by mashing the avocado and yoghurt with a fork and drizzling on a squeeze of lemon juice and a pinch of himalayan salt. Assemble the dish as in the picture and sprinkle with chopped spring onion and samphire – or other greens of your choice. Slice the green beans lengthways and dress.

This dish is a belter! Truly filling and the perfect dish for lunch or supper.
