You can make these with plums, prunes, dates, figs or a mix, as I did. Be sure to soak these dried fruits beforehand to release their festive flavours and keep the balls soft and delicious. Soak 2 cups of raw unroasted cashew nuts for at least two hours. Drain and throw away the rinse water. Soak two cups of dried plums, figs, prunes or dates – I used figs and dates in these balls. Soak for four hours or overnight. Do not use the water for this recipe but keep it for sweet smoothie blends! Food process the nuts and fruit on the S blade with 1 teaspoon of quality vanilla powder or essence,1 cup desiccated coconut, 1 pinch Himalayan salt and the juice of half a lemon.
Once blended take dessert sized scoops and massage into hands to form balls. The balls should be well formed, firm and oily. Keep in the fridge and serve with a smile.
