Recipe for Dairy Free Fig & Goji Berry Ice-cream

When you just need something sweet!

Figtastic!!

Such a wonderful and EASY recipe that you can prepare in a few minutes.

Ingredients

  • 3 frozen bananas
  • 3-6 rehydrated large figs
  • 2 tbsp rehydrated goji berries
  • 1tbsp of fig water from rehydrating

Method

JUST BLEND!  You will probably need a powerful blender or a vitamix to get it nicely smooth but if your blender can blend ice it should be just fine!

Notes: This recipe serves 4 * don’t forget to freeze your bananas but you have to PEEL THEM FIRST! It’s very difficult to get the skin off a frozen banana * use very or overripe bananas then freeze * buy organic dried figs and rehydrate for at least 4 hours or overnight in filtered water

Served with cacao nibs and rehydrated goji berries.

This is what I call a seriously raw breakfast for any time of the day!

Cacao nibs are hulled and crushed cacao beans. They give you more antioxidant flavanoids than red wine, green tea and blueberries! They are an incredibly rich source of magnesium and other essential minerals like calcium, zinc, iron, copper and potassium! Cacao nibs will boost your mental and physical wellbeing. They are an awesome superfood and should not be substituted with processed cocoa powder.
