Recipe: Raw Vegan Superfood Donuts

Well it sure has taken me some time to get a Raw Donut recipe out there! Not because essentially I have been steaming away at a 1,000 recipes in the kitchen and working tirelessly to perfect my recipe (I can be like that sometimes but not with this one!) Simply because, (drum roll, please) I am not a fan of donuts.

You heard it here first buddy! I was never ‘in the old days’ a fan of sugared donuts, those big fluffy balls of yuk, the ringed donuts oh no, no, no, no! Not for me! In the same bracket I would put chocolate eclairs, profiteroles (I used to just suck the chocolate off!) and anything ‘choux’! These just never rocked my boat. And fresh whipped cream? A tragedy I never indulged in.

So I never missed them or needed to ‘replace’ them with raw donut treats.

Looking at so may delicious raw donut creations online and in real life still didn’t spur me in to making my own. I just didn’t fancy having 20 donuts lying around that would remind me of something I just didn’t like.

So, why am I posting this recipe? Because at Raw Juice Camp this year I wanted to ‘sex-up’ breakfast a bit. We enjoy amazing Macaccinos and Carrot Cakes and chia & oat puddings and lots of green smoothies at breakfast time, but I was just in the mood for shaking it up at our Raw Juice Camp this April. So I scratched my head and played with a few ideas: and it came to me. Big fluffy sugared balls of donuts! I know! I was less keen on the idea of the donut rings full of nuts and seeds (too much like a bagel) or full of cacao and oats (too much like a bliss ball) What I was going for was light and fluffy, sensationally tasty, absolutely satisfying, delicate & giving and of course something that would satisfy the appetite of the most rampant of boot campers.

For peanut (or other) allergy suffers you can substitute the peanut flour for more almond flour, or try buckwheat flour. Plus this recipe made about 20 large donuts so adjust to your needs.

Served with fanned strawberries and Chilli Chococcinos (but you don’t have to be posh just eat them au naturelle!)

It’s important to wash, soak and sprout your nuts and seeds: please don’t be tempted to just put them in the recipe ‘out of the bag’. You are risking putting lots of ‘dirty seeds’ into the system which contain toxins and anti-nutrients. Don’t panic: they won’t kill you by any stretch but if you are in the space where you care about what goes in to your body CLEAN nuts and seeds don’t just mean ‘soaked in water for a bit’ or just ‘activated’ (brought to ‘life’ and full of awakened enzymes and therefore energy) but they also mean the absence of unhelpful toxins that will add extra tasks to a (detoxing) system that is already under stress from modern lifestyle & diets. 

The strawberries in the pics were MASSIVE and unusually large so the donuts actually look a little smaller in the pics than they actually were. You should make to twice the size of a regular bliss ball: go for golf ball and not tennis ball size as a guide. Hell, make ’em as big as you like!

Ingredients (makes around 20 large donuts) 

  • 2-3 cups carrot pulp left from juicing (not grated carrot)
  • 1 cup peanut flour or coconut flour
  • 1 cup date paste (dates soaked overnight and blended in water to make a syrup)
  • 1 cup desiccated coconut
  • 1 cup soaked and sprouted sunflower seeds (‘activated’ by soaking overnight rinsing and resting for a day)
  • 1 cup soaked and washed almonds (soak in water overnight and wash)
  • 1 cup ground chia seeds (use a mill or a coffee grinder)
  • 1 tbsp cacao
  • 1 tbsp lucuma powder
  • 2 tsp maple syrup (or other liquid sweetener)(optional)
  • Water to blend

Coating:

  • 1 cup desiccated coconut
  • 1 or 2 tsp xylitol

Method

Simply add all ingredients to a food processor and mix until a cake like mixture is formed. Shape in to large balls and roll in the coating mixture. Leave to rest in the fridge for an hour (if they can last that long!) These are truly delicious as a hearty superfood living breakfast that will definitely lift your day! Or an anytime snack to give you a massive LIFT of energy!

Served with Chilli Chococcino or Macaccino or a big green juice or, simply, just as they are.
